There is something to be said about having a handful of really great, tried and true recipes for things that you eat often. One of the things I eat most often is a fresh, mostly raw salad with a good mix of vegetables (I don't usually add fruits) and occasionally an egg or goat cheese on top.
When I want a zesty, spicy and oh so flavorful dressing I'll whip up a batch of this Carrot and Ginger ensemble. I could literally eat cardboard if it was smothered in this golden deliciousness!
Carrot & Ginger Dressing
1 small carrot, shredded
1/2 small white onion, chopped
2 inch piece of fresh ginger, peeled and grated
1/4 C Braggs Amino's or soy sauce
1 tablespoon tomato paste or 4 sun-dried tomatoes, chopped
1 tablespoon rice vinegar, add more to thin the dressing if desired.
2 tablespoons neutral oil, like olive, avocado or liquid coconut oil
Add all ingredients to your blender device and mix until well blended and smooth. Away you go! Stores well in a glass container/ jar in the fridge for up to 5 days... if it lasts that long :)
